How to cook pancakes with mineral water

To make pancakes, take 500 ml of mineral water, 1 glass of flour, 2 tablespoons of vegetable oil, 3 eggs, 2 teaspoons of sugar, a pinch of salt.

Pour mineral water into a saucepan or bowl, add eggs, sugar, salt to it, pour in vegetable oil. Stir everything well. Stir continuously and add flour. The dough should acquire the consistency of liquid sour cream. Set it aside and let it stand for half an hour.

For frying pancakes, it is best to use a cast iron skillet or skillet that has a non-stick coating and low sides. Put it on fire. Once the pan is hot, pour some vegetable oil into it. To prevent the pancakes from sticking to the bottom of the dishes, you need to heat them well.

Pour a portion of the dough into the skillet so that it is evenly distributed over its surface. To do this, with a circular motion of your hand, unfold the dishes so that the pancake spreads over the bottom in an even layer, and put it back on the stove.

If the pancakes break during cooking, add flour to the dough, but not too much, otherwise they will turn out too thick.

Bake the pancake on one side, turn it over with a spatula, fry on the other side until tender. Serve ready-made pancakes hot with sour cream or something sweet: jam, jam, condensed milk, etc.

You can make spring rolls if you like. It can be any: minced meat, liver, cottage cheese, eggs, etc. Prepare the minced meat pancake filling. You will need: 300 g of ground beef or pork, 1 onion, a little salt, ground pepper, herbs to taste.

Peel and finely chop the onion, fry it in oil until golden brown. Add minced meat to it, stir and fry it until tender. Put salt, pepper and finely chopped dill in the filling.

To prepare the next type of filling, take 1 glass of cottage cheese, 1, 5 tbsp. tablespoons of granulated sugar, 1 egg, 1 teaspoon of flour, 3 g of vanillin, salt - to taste. Rub the cottage cheese through a sieve or pass it through a meat grinder, add the egg, sugar, salt, flour, vanillin and mix everything. If desired, add lemon or orange zest, chopped candied fruits or a little chopped nuts, raisins.

Fold the pancakes in the following way. Place 2 teaspoons of the filling in the middle of the pancake, then roll up the sides. Then fold the transverse parts of the pancake so that you get an envelope.

If there are a lot of filled pancakes, you can freeze them for future use.

Fry envelopes on both sides in a skillet in oil and serve hot.
