    • For steamed curd pudding:
    • 20 g sugar;
    • 100 g of cottage cheese;
    • 15 g candied fruits;
    • 10 g semolina;
    • 30 g sour cream;
    • 2 eggs;
    • 10 g butter;
    • 10 g of any nuts;
    • 15 g seedless raisins.
    • For the apple curd pudding:
    • 500 g of cottage cheese;
    • 2 apples;
    • 200 g sugar;
    • 2 eggs;
    • 50 g butter;
    • 35 g semolina.

Step 1

Rub the curd through a sieve. Combine it with semolina, add sour cream and mix thoroughly. You can use rusks instead of semolina. It is advisable to take fatty cottage cheese.

Separate the yolks from the whites. Mash the yolks with sugar and butter. Pour the egg mixture into the curd and mix everything.

Chop candied fruits and nuts. Add them and raisins to the curd mass. Whisk the egg whites into a lather and add them to the curd while stirring continuously. It is the whipped proteins that give this dish a delicate and fluffy consistency.
