Step 1

Choose 4 small courgettes. They must be the same, otherwise, when cooking, some will turn out softer, while others will be harder, and the dish will be spoiled. Wash them thoroughly and pat dry on all sides. Then cut lengthwise into two equal halves.

Step 2

Preheat oven to 180 degrees. Until it reaches the desired temperature, remove the pulp from the zucchini with a teaspoon. This must be done carefully so as not to damage the peel. You should get some kind of boats.

Step 3

Brush the zucchini with a little sunflower oil - they should be lightly greasy. Then place them on a baking sheet or in a fireproof dish, skin side up. Bake zucchini in the oven for 15 minutes.

Step 4

While the zucchini is baking, prepare the filling. Lightly fry finely chopped onions and carrots in sunflower oil, then add finely chopped zucchini pulp to them, salt and simmer for another 5 minutes.

Grind the pre-cooked chicken fillet in a meat grinder or in a blender and add it to the filling in the pan. Mix everything thoroughly, sprinkle with parsley and remove from heat.

Step 6

Remove the courgettes from the oven and turn them over, skin side down. Season with salt, put the filling in them and put back in the oven. You need to cook the zucchini for 10 minutes.

Step 7

After this time, brush them with a lot of sour cream. Then bake the zucchini for another 5-7 minutes. After that, remove the vegetables from the oven, place them on a serving dish and sprinkle with plenty of finely chopped parsley.
