Meat stew with vegetables is a dish that can be prepared quickly and easily. It does not require the constant attention of the hostess, so it is convenient to do it in parallel with other dishes.

- 1 kg of beef;
- 2-3 medium-sized carrots;
- 1 large onion
- 4-5 stalks of celery;
- a bunch of leeks;
- 100 g lard;
- 1 glass of wine;
- 3-4 tomatoes;
- 2 bell peppers.
- For meat with eggplant:
- 500 meat;
- 1 large eggplant;
- 3-4 tomatoes;
- 1 onion;
- 200 g sour cream;
- vegetable oil.
Instructions
Step 1
Cook beef with vegetables. To do this, cut the meat into pieces with a side of about five centimeters. Then stuff them with bacon. To do this, make small cuts in the fillet, where and insert pieces of bacon. Place the meat in a greased dish and place in the oven for 10 minutes, baking the meat at 200 degrees.
Step 2
Prepare vegetables. Cut the onion into half rings, the garlic into small cubes, like the celery stalks. Chop the bell peppers and leeks into strips. Cut the carrots into thin slices. Combine vegetables in a saucepan with meat, cover with a mixture of wine and water, and then add canned or fresh peeled tomatoes. Simmer the mixture over low heat for an hour, covered, until the beef is tender. Season with salt and pepper before cooking or add herbs to taste. For a thicker sauce, place 2-3 tablespoons of flour in a saucepan and stir.
Step 3
Try other variations of a similar recipe. For example, beef can be rolled in flour and pre-fried in oil rather than baked. The same should be done with vegetables. Such a dish will be less dietary than the first option.
Step 4
When cooking pork and chicken with vegetables, shorten the cooking time - half an hour will be enough. You can also add potatoes to the stew for satiety. Since it does not cook well in an acidic environment, it is best to stew it with meat, not with wine sauce, but with broth or with the addition of sour cream.
Step 5
Use seasonal vegetables in your stew. In late summer and autumn, you can taste the eggplant stew. To do this, cut the meat, preferably beef or lamb, fry a little in oil. Place chopped onions, eggplant and tomatoes, and cooked meat in a saucepan. Season with salt and pepper. Simmer until tender, adding a little sour cream and adding water if necessary.
