To brew a really delicious tea, the first thing to look out for is water. In no case should it be too tough. Ideally, the water for tea should be spring or spring water. But in the realities of city life, it is often impossible to get such water. Therefore, before boiling it, it must be passed through a filter or simply defended for 3-4 hours. If you know for sure that hard water is entering your home, you need to add a pinch of baking soda to it. This will not affect the taste in any way, but it will help to neutralize the excess of salts.

The next is the dishes. More precisely, a teapot. What should it be? The Chinese, for example, prefer to use porcelain. But delicious tea can also be brewed in a ceramic teapot or in a glass one. An important nuance: before filling the tea leaves, the kettle must first be warmed up well. The easiest way to do this is to sprinkle boiling water on the inside and outside several times. More difficult - place the kettle in the oven for 10 minutes, preheated to 50 degrees.

Now you need to choose what exactly to put into the heated kettle. Namely, the tea leaves. Which one is better to choose? It should be borne in mind right away that tea bags, which have recently become a very frequent guest in our cups, are unlikely to allow you to enjoy the aroma of real tea. Therefore, the tea leaves should be chosen exclusively in the sheet version.

What proportions are needed? To obtain tea of medium strength, the ratio is considered optimal: 1 teaspoon of loose leaf tea to 1 cup plus 1 teaspoon per teapot. That is, if your kettle is designed for 4 cups (1 liter), then it will require 5 teaspoons of tea leaves. In this case, of course, you should focus primarily on your taste.

Well, now the very essence itself. How to brew tea so that it turns out to be truly delicious? After the tea leaves are already in the kettle, it must be filled with water at a temperature close to boiling water, about 90-95 degrees. But you need to fill the kettle so much that the water completely covers the tea, but no more than 1/4 of the volume of the dishes. Now you need to pick up the kettle and vigorously twist it in different directions, shake up what is inside, "rinse" the tea.

After that, hot water, almost boiling water, should be poured into the kettle again, and the dishes should be half full. Then wrap the kettle with something warm. For this there is the so-called "tea woman" - a quilted felt nozzle with cotton wool inside. You can also wrap the kettle with warm towels or a napkin. In this case, special attention must be paid to the spout and lid so that the hot steam remains inside. When 2-3 minutes have passed, pour the kettle with boiling water 3/4, cover again, and after 3 minutes fill it almost to the top.

To check if the tea is brewed correctly, look inside the teapot - if a light white foam has formed on the surface, then everything is done as it should. Stir it with a spoon. And now you can pour the tea into cups and enjoy the deep taste and unsurpassed aroma of a freshly brewed drink.
