Choose the type of coffee you like. The two main types of coffee beans are robusta with an astringent, pungent taste and traditional arabica.

If you have purchased unroasted "green" coffee, then roast the beans at home in a special roaster or in an ordinary cast-iron pan. Heat the roaster evenly. Pour the grains at the bottom in one or two layers. Place the cookware on low heat, gradually increasing the heat. Stir the grains with a wooden spatula. The immediate roasting begins after the first crack of the beans. The grains begin to grow in size and turn dark. You can then stop roasting at any time, but do not blacken the beans. Watch out for the steam. As soon as it becomes pungent and dense, stop frying immediately. Remember, green coffee beans last for one year, while roasted coffee beans only last for a few months.

Brew coffee from freshly ground beans. The grinding should be very fine, "like a Turk". Depending on the desired strength of the brewed coffee, use one to two teaspoons of freshly ground beans per 50 ml of strong drink. Store leftover coffee grounds in the freezer. Before brewing coffee, warm up the cups in which it will be served, as a cold cup will spoil the taste of a quality drink.

Heat the turkey over low heat. Pour coffee into it and keep it on fire for a little, without pouring water. Add some sugar and spices to taste. But do not overdo it with seasonings - they distort the true taste of the drink. Pour water into the Turk and stir with a spoon.

Step 5

Use a spoon to remove the dense light foam and place in prepared cups. Repeat the procedure several times - stir, remove the froth, keep the coffee on fire. The optimum water temperature for brewing coffee is 95 - 98 degrees. Never bring coffee to a boil. As soon as it starts to rise, lift the Turk, stir the coffee again and put it on the fire for another half minute.

Step 6

Pour coffee into cups in a thin trickle. In each cup, a dense homogeneous light foam (cream) forms on the surface of correctly brewed coffee. Add cream or milk as desired.
