In hot summer, you want something cool and refreshing. Okroshka is a wonderful dish for a summer lunch. There are a lot of okroshka recipes, but the classic recipe will always suit everyone's taste.
It is necessary
- The recipe is for about 6 servings:
- -5 pieces of potatoes;
- -2 medium cucumbers;
- -3 chicken eggs;
- -8-10 pieces of radishes;
- -200 grams of cooked doctor's sausage, ham or chicken fillet;

- greens (dill, parsley, cilantro, green onions);
- -salt to taste;
- - kvass or kefir to taste.
Instructions
Step 1
Boil the potatoes in their uniforms until tender, boil the eggs until they are hard. Then cool (you can hold them in cold water) and clean them.
Step 2
prepare the rest of the ingredients: Wash and peel the radishes and cucumbers from the skin (so the okroshka will be softer), wash and dry the greens. If the cucumbers are not store-bought, but homemade and with a thin skin, they can not be peeled.
Step 3
Prepare a deep container (a large deep bowl, a small saucepan will do, so that later it would be convenient to mix the finished okroshka in it). Cut the sausage (ham or chicken fillet) and potatoes into cubes, chop the eggs and radishes. Mix everything. It is better not to add salt right away, as okroshka may become too watery.
Step 4
Arrange the chopped okroshka in deep bowls. Add kvass or kefir to taste, salt and pepper as desired, season with finely chopped herbs. Put 1 tablespoon of sour cream in okroshka with kvass, add other sauces to taste.
