Panna cotta is originally from Italy. Like most Mediterranean cuisine, it is delicious yet easy to prepare. Panna cotta is based on cream and gelatin. You can diversify the delicate flavor palette by adding berries, fruits, syrups and sauces.

- 400 ml cream, 33% fat
- 150 g sugar
- 15 g gelatin
- 200 ml of water
- 2 yolks
- 1 vanilla pod
- seasonal berries and fruits for decoration
- mint leaves
Instructions
Step 1
Soak the gelatin. Place it in a deep plate. Pour in cold boiled water. Leave to swell for 40-50 minutes.
Step 2
Cut the vanilla pod lengthwise and unfold the flaps. Use a sharp knife to carefully separate the seeds.
Step 3
Measure out 350 ml of cream. Pour them into a heavy-bottomed saucepan. Add vanilla seeds and sugar to the cream. You can use powdered sugar instead of regular granulated sugar. Stir well and place the mixture over medium heat. Heat the cream, stirring constantly. They need to be brought to a boil, but absolutely not to boil. When the cream is warm, remove from heat and strain through several layers of cheesecloth to remove vanilla seeds.
Step 4
Combine the remaining 50 ml of cream with the yolks. Add yolks one at a time. Use a fork to mix the mixture until smooth, but do not whisk.
Step 5
Squeeze out the gelatin by draining off excess water. Add it to the cream and yolk mixture. Mix again with a fork. Gently, stirring constantly, pour the resulting mass into the heated cream.
Step 6
Put the dishes back on the stove. Turn on low heat. Continue heating. As soon as the cream starts to boil, turn off the heat.
Step 7
Place the saucepan with the mixture on the table and leave to cool at room temperature. After 15-20 minutes, the cream will cool sufficiently.
Step 8
Transfer them to a whipping container, such as a glass or mixer bowl. Beat the mixture on high speed for 1-2 minutes.
Step 9
Then lower the utensils for beating into a large saucepan, one third full of very cold water. It will turn out to be a cold "water bath". Continue beating the panna cotta with a mixer until it has cooled completely (about 5-7 minutes).
Step 10
Use small muffin tins, small transparent bowls, beautiful wine glasses, or other serving dishes. Lightly lubricate the inside with vegetable oil. Pour the creamy mixture into molds. Place the molds in the refrigerator, but not in the freezer. Leave to cool for 4-5 hours.
Step 11
After taking out the finished panna cotta from the refrigerator, dip the molds into warm water for a few seconds. Then gently flip onto plates, tap on top a little and remove.
Step 12
It remains to decorate the panna cotta with berries and pieces of fruit, as well as mint leaves. In winter, use candied fruits and jam berries.
