Step 1

The first step is to mix the yolks, salt, water and oil in a bowl, mix everything carefully. At this stage, it is worth remembering that if coarse salt is taken, then the mass must be mixed more thoroughly so that the salt completely dissolves.

Step 2

Next, you need to pour about 400 grams of flour onto the work surface with a slide, then make a depression in it and pour the yolk-oil mixture there, start quickly kneading the dough, gradually adding the remaining 100 grams of flour (you need to knead the dough for a long time, at least 10 minutes, in the end it should become tight and resilient enough).

It is simple to check the readiness of the dough, you need to form a lump from the dough, leave it for a minute, then slightly press on it with your finger: the finished dough will return to its original state within a couple of seconds.

Step 3

As soon as the dough is ready, it is necessary to sprinkle the work surface with flour and use a rolling pin to roll it out to a thickness of 1-2 millimeters (so that when rolling it does not stick to the rolling pin, you need to turn the layer as often as possible). Leave the layer rolled out, without covering it with anything, for about 15 minutes (during this time it will dry out slightly).

Step 4

Over time, using a sharp knife, cut the dough into strips, squares or in the form of any other shapes. Dip the pasta in flour and let dry completely (you can use the oven).

Ready-made pasta can not be dried, but immediately boiled, it is necessary to dry them only if there is a preparation for future use.
