Step 1
Before cooking cereals, it should be sorted out. Buckwheat often contains small stones. If you find such a pebble in your porridge, you might even break a tooth. So we carefully examine the cereals and separate all impurities.

Rinse the sorted cereals - buckwheat is often dusty. It is better not to rinse in a colander, through the holes of which small grains often fall out. It is necessary to pour the buckwheat into a container and fill it with water. At the same time, small specks and foreign seeds float up and they can be easily drained along with water. We repeat this until the drained water is clear.
Step 3
Take buckwheat and pour boiling water over 1 cup of cereal and 2 cups of boiling water. If you are going to cook a side dish, put salt on the bottom of the dish. If desired, you can add dry seasonings and chopped dry herbs instead of salt. And if you are preparing a dish for the "buckwheat diet", then salt is not needed. After pouring boiling water over, it is best to wrap the dishes with the future porridge - in a blanket, in pillows, you can simply cover it with a towel. In a few hours, buckwheat will absorb water, swell and you will get a crumbly porridge. You can do it in the evening and by morning everything will be ready. Or vice versa, brew cereals in the morning for a side dish for dinner. All you have to do is reheat the dish and add oil if you like. Such buckwheat retains all the nutrients and vitamins.
Step 4
You can pour buckwheat not with boiling water, but with kefir, and then you get a dietary and even medical dish. Put 1-2 tablespoons of cereal in a glass and pour kefir to the top. Again, as in the first case, you can do this in the morning - and then by the evening you will have a light dinner. Or pour buckwheat with kefir at night - the diet breakfast is ready. It is believed that this dish is very useful for diabetics. It also normalizes digestion and is useful for constipation. Buckwheat contains a lot of iron, so eating this dish increases hemoglobin.
