Muffins are an incredibly tasty and satisfying delicacy that can be served with both tea and coffee. It is not difficult to prepare this dish, and if you strictly adhere to the recipe, then this dessert will simply melt in your mouth.
How to make cottage cheese muffins
For eight cupcakes you will need:
- 200 g of fresh cottage cheese (preferably granular);
- 100 g butter (unsalted);
- 200 g flour;
- three eggs;
- about 120-150 g of sugar;
- a tablespoon of lemon zest;
- a teaspoon of baking powder (a little more);
- a pinch of salt.
The first step is to grind the butter and sugar.
Then add salt and eggs to the mass (add one at a time and mix thoroughly).
Mix cottage cheese with zest and mix with the creamy mixture.
Sift the flour, add baking powder to it. Pour the flour into a bowl with the prepared curd-creamy mass and gently knead the dough.
Put the dough in special molds, filling them only halfway (silicone ones can not be greased, but molds made of a different material should be greased with vegetable oil).
Bake for 30-35 minutes at 180 degrees.
How to make chocolate muffins
You will need:
- 250 g butter;
- a glass of sugar;
- four eggs;
- a pinch of salt;
- 100 ml of milk;
- a bag of vanillin;
- four tablespoons of cocoa powder;
- two glasses of flour;
- 1 teaspoon baking powder.
Beat eggs with salt in one deep bowl, and grind butter and sugar in another.
In a saucepan, mix milk, vanillin, cocoa, heat to 50 degrees and add mashed butter. Mix well. Pour 1/3 of this mass into a clean cup and add 1/2 tsp into it. baking powder, dissolved in one or two tablespoons of milk. The glaze is ready.
Cool the remaining chocolate mass, add beaten eggs and flour with baking powder to it. Stir gently so that the egg foam does not settle. The dough should be very fluffy.
Transfer the finished dough into molds, filling them with no more than 2/3, and place in the oven for 30 minutes. Temperature - 180-200 degrees.
After the lapse of time, remove the muffins from the mold and cover with icing.
