It is necessary

  • For the classic recipe:
  • - 1 kg of flour;
  • - 700 g of lamb;
  • - 3 onions;
  • - 10 g dry yeast;
  • - 2 chicken eggs;
  • - 200 ml of 3.5% milk and water;
  • - 70 ml of vegetable oil in the dough + for frying;
  • - 1/2 tablespoon Sahara;
  • - 3/4 tsp ground black pepper;
  • - salt;
  • For open circuits:
  • - 800 g flour;
  • - 450 g of fatty beef;
  • - 2 onions;
  • - 250 ml of meat broth;
  • - 200 ml of milk;
  • - 4 chicken eggs;
  • - 50 g butter;
  • - 30 ml of vegetable oil;
  • - 1/3 tsp each black and red ground peppers;
  • - salt.

Instructions

Step 1

Classic Peppermint Recipe

Heat milk and water to 40-50oC on a stove or microwave and pour into a deep container. Add vegetable oil, eggs, sugar and 1 tsp. salt. Whisk everything thoroughly.

Step 2

Sift flour, mix it with yeast and add in small portions to the liquid mixture, stirring constantly, first with a spoon, then with your hand. Knead a soft dough, place it in a floured saucepan or bowl, cover with a damp towel and put in a warm place for 1-1.5 hours. Knead it several times during this time.

Step 3

Wash the lamb, pat dry with a paper towel and cut into wedges. Peel the onions and cut into quarters. Rotate the meat and onions in a meat grinder, season with pepper and salt.

Step 4

Divide the dough into three parts, roll each sausage and cut into equal pieces. Roll out circles with a diameter of 7 cm and spread the minced meat over them. Lift the protruding dough and shape into a basket, pinching the edges with your fingers in a circle. Leave a small hole in the center. Flatten the patties lightly with your palm.

Step 5

Heat vegetable oil in a skillet; there should be enough of it for semi-deep fat cooking. Put the peppers in it with the holes down, fry for 2-3 minutes, then turn the products over, pour them with hot oil and cook for another 3-6 minutes until the dough is golden brown.

Step 6

Open broth marshmallows

Place a pinch of salt in the sifted flour and heap it onto a clean table or large cutting board. Make a hole in the top, gently pour in the eggs with warm milk and vegetable oil. Let the liquid ingredients soak slightly and stir in the flour, gently picking it up from the edges.

Step 7

Knead the dough vigorously for 10 minutes, until it becomes elastic, then form a ball out of it, wrap it in plastic wrap or a damp towel and set it aside for 15 minutes to rest.

Step 8

Pass the meat and onions, cut into pieces, through a meat grinder. Pepper the minced meat, salt and stir with softened butter until smooth.

Step 9

Roll out the tortillas to the size of a saucer. Put in their middle 1 tablespoon each. minced meat. Raise the edges of the dough and secure it in a pot so that the filling is only half full. Bake the stews at 180oC for 15 minutes, remove and pour into each hot broth. Return them to the oven and cook for 10-15 minutes.
