The German national streusel pie is not only easy to prepare, but also able to stay fresh for a long time, so you can cook it on the eve of a planned celebration or tea party, but still it is considered the tastiest when it is freshly baked. The most impressive thing about it is the sprinkling - sweet and crunchy, while melting in your mouth.
It is necessary
- Dough:
- - 400 g flour;
- - 120 ml of milk;
- - 20 g of fresh yeast;
- - 80 g of sugar;
- - 80 g of butter;
- - 1 pinch of salt;
- - 1 egg.
- Streisel:
- - 220 g of butter;
- - 220 g of sugar;
- - 1 bag of vanilla sugar;
- - 400 g flour;
- - 30 g butter;
- - 5 tbsp. fresh cream.

Step 1
Streusel or Streusel pie (from the German Streusel) has many variations. It is baked according to the classic recipe, almonds are added to the sprinkling, berries or jam are used as a filling. We can say that every German housewife has her own signature recipe for this cake.
Step 2
To prepare the dough, heat the milk without boiling, add 100 grams of butter to it, wait until it melts. Dissolve the yeast in a warm mixture. In a large bowl, combine the flour and sugar, add the butter and milk mixture, the egg, and knead to a soft, smooth dough. If it turns out to be too hard, sprinkle it with a couple of drops of milk, knead it again. If, on the contrary, it is damp, stir in a little more flour. Ideally, the dough should stick slightly to your hands, but lag behind the edges of the bowl. Cover the bowl with a lid or towel and leave in a warm place for half an hour. Visually, the dough should increase in volume by 2-2.5 times.
Step 3
Preheat oven to 180 ° C, line baking sheet with baking paper. Roll out the dough that has come up to the size of the baking sheet, transfer it to the paper.
Step 4
To prepare Streisel, mix 220 grams of butter at room temperature with sugar, vanilla and flour, rub the resulting mixture with your hands until coarse crumbs are formed. Sprinkle the dough on a baking sheet with a streusel, bake for 25-30 minutes on a medium level until a light golden crust forms on the surface of the streusel. If you are not sure about the power of your oven, do not be too lazy to look into it a couple of times during cooking, because if the streusel starts to brown, it’s too late - the cake has dried out.
Step 5
Heat the fresh cream, melt the remaining butter in it, sprinkle the prepared, still hot pie with the resulting mixture, cut it into portions.
