A cake without baking is an original dessert that is not baked, but infused in the refrigerator. They are made, as a rule, from ready-made confectionery products (marmalade, cookies, marshmallows), as well as from cottage cheese. These cakes are usually easy to make and quick to make.

Chocolate cake

To prepare this cake you will need:

- 400 g of butter;

- 50 g of cocoa powder;

- ½ glass of milk;

- 2 cups granulated sugar;

- 1 ½ cups shelled walnuts;

- 3 ½ packs of cookies;

- vanillin.

Put the butter out of the refrigerator beforehand. When it feels soft, rub it thoroughly over half a packet of cocoa powder. Boil half a glass of milk and dissolve 2 cups of granulated sugar in it. Then cool it down. Whisk the butter, gradually adding the cooled milk mixture. Break the peeled walnut kernels and cookies into small pieces and put in the whipped mass together with the vanilla. Mix all ingredients very well. Moisten the dish with cold water, put the mass on it, give it any shape and leave it at room temperature for a day, and then put the chocolate cake in the refrigerator. Before serving, cut the cake into portions with a knife warmed in hot water.

Zephyr cake

To make a Zephyr cake, you need to take:

- 500-750 g of fresh marshmallow;

- 1 can of boiled condensed milk with sugar;

- 200 g of butter;

- 1 glass of walnut kernels;

- 200 g butter cookies;

- 1 lemon.

If you have only regular condensed milk at hand, then boil it. Then cool and, whisking, combine with pre-softened butter. Cut the walnut kernels into small pieces and put in the mixture of condensed milk and butter, add lemon zest and juice here. Break the cookies into small pieces and place them in the buttercream as well. Mix everything very well. Place the marshmallows on a large platter, dividing each marshmallow in half and cutting off the very top. Fill in any voids between the marshmallows by cutting the marshmallow halves into the void. Apply a layer of cream to the marshmallow. Alternate these layers until all the marshmallows are gone. Apply cream on top of the last layer and on the sides. Decorate the cake with the cut marshmallow tops. You can also lay it on the sides. Place berries (fresh or jam) between the tops on top of the cake. Leave the finished cake to soak for 3 hours at room temperature. Then place it in the refrigerator, but before serving, it needs to be "warmed up" a little.

Cake "Gourmet"

To prepare the “Lakomka” curd cake you will need:

- 1 kg of cottage cheese;

- 150 g butter or margarine;

- 4 eggs;

-100 g of walnut kernels;

- 50 g of raisins;

- 150 g granulated sugar;

- 70 g of cookies;

- 30 g of gelatin;

- 8 tbsp. l. cold water;

- 3-4 tbsp. l. hot water;

- lemon;

- vanillin;

- ground white crackers.

Rub the cottage cheese through a colander or sieve, add softened butter or margarine, yolks, granulated sugar, seedless raisins, vanillin, chopped walnut kernels, cookies broken into small pieces and mix everything thoroughly. Whisk the chilled egg whites separately into a stiff froth and gently add to the prepared mixture. Pour 2 teaspoons of gelatin ½ cup of cold water. When the gelatin swells, pour hot boiled water and lemon juice into it, stir and heat, but do not bring to a boil. Remove from heat and cool. After that, mix the cooled gelatin with the curd mass. Prepare any fruit jelly from the remaining gelatin. Grease a cake tin or a deep dish with butter and sprinkle with ground white breadcrumbs. Place the curd layer on the bottom and smooth the surface. Pour a layer of fruit jelly on top. As soon as the jelly hardens, the “Lakomka” cake can be served to the table.
