Tomato pie is something like a pizza, it is very simple and quick to make. The pie is delicious and satisfying, the whole family will be delighted with it.
- 250 g flour,
- 3 eggs,
- 120 g butter,
- 4 tomatoes,
- 1 zucchini
- 2 tbsp. l. olive oil,
- 2 onions,
- 1-2 cloves of garlic
- 2 tbsp. l chopped parsley
- 100 g grated cheese
- 150 g sour cream,
- ground red pepper, salt to taste,
- vegetable oil.
Take a deep bowl, put flour in it, break one egg, add soft butter, 3 tbsp. l. water, salt and knead the dough well. Roll the dough into a ball, wrap it in a linen napkin and put it in the refrigerator for 30 minutes.
Wash the zucchini well and cut into circles, wash the tomatoes too, take a deep dish and pour boiling water over the tomatoes for 1/2 minute, remove from the water and carefully remove the skin, chop the tomato pulp into thin slices. Fry tomatoes and zucchini in a pan on both sides separately from each other. Peel the onion and garlic, finely chop and fry together in a pan. Fried onions, garlic, finely chopped parsley, grated cheese, break two eggs, add sour cream, red pepper, salt and mix well.
Make a thin cake from the dough and put in a mold greased with vegetable oil. Pierce the cake with a fork, put the tomatoes and zucchini there. And pour the sour cream mixed with eggs on top. Send the tomato pie to the preheated oven to 190 degrees for 40 minutes.
