Halibut fillets should be fresh or well defrosted. Rinse it in water, remove bones and skin if necessary. Place in a small cup, salt, pepper a little, add rosemary, mash everything and let it brew for ten minutes. Sprinkle with lemon zest and lemon juice. Wrap in foil and place in a well-preheated oven for half an hour.

Step 3

Heat a frying pan well on the stove, melt the butter on it. Take pine nuts, if necessary, peel them and fry them in melted oil. Broil, stirring occasionally, until the nuts develop a spicy flavor and are golden brown. Add spinach to the finished nuts in small inflorescences. Cook for five to seven minutes. Add cream to the mixture and bring to a boil. Add white pepper, salt and rosemary to the boiling cream.
