Step 1
Let's start cooking. First, turn on the oven, it must be heated to approximately 190-200 degrees Celsius. Grease the baking dish with vegetable oil or cover it with parchment paper.

Sift flour into a large bowl, add sugar substitute, cocoa powder and coffee to the flour. There should be no lumps, so don't be lazy and repeat the procedure three times.

Take another deep bowl and beat the egg whites until stiff peaks. For the proteins to rise, you need to add a little salt or lemon juice. Beat the egg white at high speeds for 4-6 minutes. But do not overbeat, then the protein will stiffen the cake. Add vanilla extract to the proteins or add natural vanilla: cut the pod and use a knife to collect the contents that need to be added to the proteins.
Step 4
Gently use a spatula to take a third of the whipped whites and add them to the flour mixture. Then gradually add the remaining proteins into the flour in two more passes.
Step 5
Transfer the resulting dough carefully to a baking dish and place in the oven. You need to bake it for 35-40 minutes, you can check its readiness with a toothpick or just light pressure on the surface, if the cake is springy, then you can get it out.
