It is necessary

  • - ¾ glass of whole grain flour;
  • - 1 ½ cups of sweetener;
  • - ¼ glass of unsweetened cocoa powder;
  • - 2 teaspoons of ground coffee for making espresso;
  • - 10 egg whites;
  • - ¼ teaspoons of salt;
  • - 2 teaspoons of vanilla extract.

Instructions

Step 1

Let's start cooking. First, turn on the oven, it must be heated to approximately 190-200 degrees Celsius. Grease the baking dish with vegetable oil or cover it with parchment paper.

Step 2

Sift flour into a large bowl, add sugar substitute, cocoa powder and coffee to the flour. There should be no lumps, so don't be lazy and repeat the procedure three times.

Step 3

Take another deep bowl and beat the egg whites until stiff peaks. For the proteins to rise, you need to add a little salt or lemon juice. Beat the egg white at high speeds for 4-6 minutes. But do not overbeat, then the protein will stiffen the cake. Add vanilla extract to the proteins or add natural vanilla: cut the pod and use a knife to collect the contents that need to be added to the proteins.

Step 4

Gently use a spatula to take a third of the whipped whites and add them to the flour mixture. Then gradually add the remaining proteins into the flour in two more passes.

Step 5

Transfer the resulting dough carefully to a baking dish and place in the oven. You need to bake it for 35-40 minutes, you can check its readiness with a toothpick or just light pressure on the surface, if the cake is springy, then you can get it out.

Step 6

Let the cake cool completely and only then carefully remove it from the mold. You can serve chocolate cake with hot tea or coffee.

A total of 8 servings should be obtained from the proposed ingredients.

Decorate the cake with powdered sugar and a sprig of mint if desired.
