A domestic rooster is a quality product that requires the right approach and original preparation. Therefore, the recipe for roasting a rooster with apple juice will be very appropriate here. Note that this recipe has its own "zest", which consists in frequent sprinkling of the carcass with apple-soy sauce. At the end of cooking, the result is evident - tender meat, crispy crust and unrivaled aroma.
It is necessary
- • cock weighing 2, 0-2, 5 kg;
- • 50 g of salt;
- • 1 tbsp. l. black pepper;
- • ½ tsp. allspice;
- • 1 tbsp. l. olive oil;
- • 3 tbsp. l. soy sauce;
- • garlic optional;
- • 2/3 st. apple juice.
- • 2 medium-sized apples
- • 50 g of dried apricots.
Instructions
Step 1
Wash and dry the rooster carcass with paper towels. If there is excess fat on the rooster's belly, then it must be carefully cut off with a knife.
Step 2
In a bowl, combine salt, garlic if desired, black and allspice. Mix all the spices well. With the prepared mixture, generously rub the rooster outside from all possible sides, as well as inside.
Step 3
Leave the carcass grated with spices to infuse overnight or for 8-10 hours at room temperature.
Step 4
After this time, transfer the rooster to a baking sheet, and tie its legs together.
Step 5
Combine soy sauce and apple juice in a cup. Lubricate the cock inside and outside with the resulting apple mixture. Also, inside the carcass, you need to put a small piece of previously cut fat. Optionally, you can stuff the rooster with apples and dried apricots. Wrap the ends of the legs and wings of the carcass with foil so that they do not burn.
Step 6
Send a baking sheet with a rooster to the oven and bake until tender, as well as a dark brown crust. Every half hour, the carcass must be watered with the remaining apple mixture. Roasting time depends on the age of the rooster and on the characteristics of the oven.
Step 7
Serve the finished rooster baked with apple juice with a side dish and vegetables.
