Sorbet is a frozen dessert made with sugar syrup or fruit juice. The predecessor of sorbet is a cold Turkish drink that came to Europe in the 16th century, the recipe for a frozen dessert based on this drink was invented only in the 19th century. Alcohol is often added to sorbets.
Preparation of food
To make raspberry sorbet you will need:
- 550 g fresh raspberries;
- 1, 5 cups granulated sugar;
- 2 glasses of cold water;
- 2 tbsp. l. lemon juice;
- 1 tsp vanilla extract.
Cooking raspberry sorbet
To prepare the raspberry sorbet, pour the required amount of water into a small saucepan and add granulated sugar. Stir the syrup, bring it to a simmer, then cook for 5 minutes, stirring constantly.
Remove the prepared syrup from heat and first cool at room temperature for 20-30 minutes. Then add 1 teaspoon of vanilla extract to the syrup and place in the freezer for 15 minutes. At this time, prepare the main dessert ingredient - raspberries.
Whisk the raspberries in a blender with the cooled sugar syrup. Strain the resulting mixture through a sieve to get rid of the berry seeds. Add 2 tablespoons lemon juice to the raspberry syrup and beat again thoroughly. Pour the resulting raspberry sorbet into a plastic container, put in the freezer for 1 hour, after the time has passed, serve in glasses. Garnish the cold dessert with a sprig of mint or fresh berries before serving.
