There are zucchini, but you do not know what to cook? Try baking a delicious zucchini roll with cheese filling. There is nothing complicated in the recipe, so you can safely experiment in your favorite kitchen.
It is necessary
- For the cake:
- - 400 g zucchini,
- - 2 eggs,
- - greens to taste,
- - salt to taste,
- - 100 g of wheat flour,
- - 1 tsp baking powder,
- - dry spices to taste.
- For filling:
- - 4 tbsp. spoons of sour cream,
- - 120 g of hard cheese.
Instructions
Step 1
Finely grate the zucchini, salt, squeeze the juice.
Step 2
Beat the egg yolks lightly, season with salt and season to taste.
Step 3
Chop greens and mix with yolks and zucchini.
Step 4
Whisk the whites until stiff.
Step 5
Divide the beaten egg whites in half. Mix the first part with the vegetable mass. Stir gently.
Step 6
Sift flour with baking powder. Stir the flour into the vegetable mixture.
Step 7
Add the second portion of the proteins to the vegetable mixture and stir until smooth. Stir from bottom to top to make the mixture more fluffy.
Step 8
Grease the parchment with oil, lay out the dough, flatten (the thickness of the crust should be about 1 cm). Bake the crust at 180 degrees for about 20 minutes.
Step 9
While the crust is baking, finely grate the cheese.
Step 10
Carefully remove the crust from the baking sheet with paper. Brush the cake with sour cream. Place the grated cheese on top of the sour cream. Garlic can be added if desired. Roll the cake into a roll, refrigerate.

Before serving, cut the courgette roll with cheese filling into portions.
