Summer is the time for juicy, ripe and fresh vegetables that you can even pick from your own garden bed. From them you can make an unusual and original warm salad with honey dressing.
It is necessary
- - one tomato;
- - 1 tbsp. a spoonful of mustard;
- - 1 tbsp. a spoonful of olive oil;
- - Bulgarian pepper;
- - a clove of garlic;
- - greens to taste;
- - 50 g feta cheese;
- - two eggplants;
- - 1 tbsp. a spoonful of honey;
- - thyme;
- - rosemary.
Instructions
Step 1
Take sweet bell peppers and cut them into medium slices. Also cut up the eggplants. Add a little olive oil to a deep baking sheet, add thyme leaves and a couple of rosemary sprigs. Add chopped vegetables, salt to taste and stir. Put the vegetables in the oven at 180 ° for 10-15 minutes.
Step 2
Pour a tablespoon of honey, olive oil, half a tablespoon of mustard into a separate bowl. Stir all ingredients thoroughly.
Step 3
Remove the vegetables from the oven and while they are hot, add finely chopped garlic to them and chop fresh herbs there.
Step 4
Cut the tomato into large wedges and mash the feta cheese with a fork. In a separate bowl, mix chopped tomatoes, mashed cheese, add baked vegetables. Mix everything well.
Step 5
Put the salad in a nice plate, garnish with herbs and pour over the honey dressing prepared earlier. This salad should be served warm while it is still hot, for lunch or dinner.
