Ingredients:

  • 1 mackerel;
  • 1 tomato;
  • 1 tablespoon of yogurt
  • 1/3 bell pepper;
  • 2 pinches of your favorite seasoning;
  • 2 pinches of ground pepper mixture;
  • 100 g of processed cheese;
  • 60 g of hard cheese;
  • 1 lemon slice
  • 1, 5 tablespoons of bread crumbs;
  • goat or cow milk;
  • 1/3 bunch of parsley with basil

Preparation:

  1. Gut the fish carcass and cut it to make a "little book". If possible, select all visible and invisible bones from the fish fillet.
  2. Put the peeled carcass in any deep container, pour milk and soak for at least an hour. This procedure will relieve the fish of the unpleasant odor that appears during baking.
  3. After an hour, drain the milk, and sprinkle the fish with lemon juice, rub with salt, pepper, thyme and rosemary.
  4. Wash the tomato and herbs under running water and dry. Cut the tomato into cubes and finely chop the greens with a knife. Cut the hard cheese in the same way as the tomato. Combine the prepared ingredients in one container and mix.
  5. Cut the melted cheese into slices.
  6. Spread a piece of foil on the working surface, not with it, lay out mackerel with a "booklet", placing it with the skin down, but with the sirloin up. Put all the filling on one half of the carcass and cover it with slices of processed cheese.
  7. Then cover the filling with the free part of the fillet, forming a whole carcass.
  8. Pull the edges of the carcass with ordinary threads (silicone strands) and fix so that the filling does not fall out.
  9. Gently spread the stuffed mackerel with yogurt, sprinkle with breadcrumbs, wrap in foil and place in a baking dish.
  10. Send the form for a quarter of an hour in the oven preheated to 180 degrees.
  11. After this time, gently unfold the foil, increase the heat in the oven, brown the breading for another 4-5 minutes using the grill.
  12. Transfer the prepared Greek-style mackerel to a platter, garnish with cherry tomatoes and serve with a glass of dry white wine.
