Chak-chak is one of the famous sweet dishes of Tatar cuisine. It consists of small balls or short sticks that are fried in hot oil and generously poured with hot honey syrup. After the honey has set, the cake is ready to eat. Chak-chak is shaped like a pyramid, cone or ball. It is served as a dessert for tea or coffee.

- For the test:
- 5 eggs;
- 125 ml of milk;
- 4 cups sifted flour;
- 10 g sugar;
- 10 g butter;
- 5 g of salt.
- For syrup:
- 200 g of honey;
- 150 g sugar;
- 20 g of water.
- For deep fat:
- 500 g odorless vegetable oil.
Instructions
Step 1
Beat eggs in a cup with sugar, salt and melted butter. Sift flour and add it to the egg mass, mix well.
Step 2
Knead a soft dough like for dumplings. Place it on a plate and cover with a damp towel to keep it dry. Let the dough stand for 1 hour.
Step 3
Roll out the dough with a rolling pin into a thin layer no more than 1 centimeter thick. Cut it into thin strips, which then roll into flagella and let them dry a little.
Step 4
Cut the dried flagella into small pieces, from which you need to form balls.
Step 5
Heat vegetable oil in a deep saucepan and fry the balls in it until golden brown. Remove the finished balls with a slotted spoon and put on a paper towel or in a colander to drain the excess oil. They must be fried in small portions. They should float freely in the oil while frying. Cool the balls and place them in a deep plate.
Step 6
Dissolve the sugar and water in a saucepan. Put it on fire, the sugar should completely dissolve. As soon as the sugar mixture boils, pour in honey and mix everything.
Step 7
Pour hot honey syrup over the balls, stir gently. Transfer the chak-chak to a flat dish and form a pyramid or ball with your hands. To prevent it from sticking to your hands, pre-soak them in cold water. Dessert for tea is ready. It is served whole or in separate pieces. This oriental sweetness is also good because it can be stored for a long time - up to 15 days. At the same time, it also crumbles and melts on the tongue, like just cooked.
