Alu patras or potato rolls are another popular Indian dish. The combination of potatoes, thin dough, spices and herbs makes the dish unique and delicious. Alu patras are a great snack option for a festive table.

  • For filling:
  • - potatoes - 5-6 pcs. (medium size);
  • - hard cheese - 100 g;
  • - sugar - 1 tsp;
  • - salt - 0.5 tsp;
  • - coconut flakes - 2 tbsp. l.;
  • - sesame seeds - 4 tsp;
  • - cilantro greens - 1 bunch;
  • - turmeric - 0.5 tsp;
  • - garam masala - 0.5 tsp
  • For the test:
  • - flour - 2, 5 glasses;
  • - turmeric - 0.5 tsp;
  • - salt - 0.5 tsp;
  • - sunflower oil - 1 tbsp. l.;
  • - water (cold) - 0.5-1 glass.

Instructions

Step 1

Dough preparation. Combine flour, half a teaspoon of turmeric and salt, stir. Add butter and rub the flour and butter with your hands. Gradually pour enough water into the flour so that you can knead a thick enough dough. Knead the finished dough with your hands for 5-7 minutes, then cover it with foil and leave for 20-30 minutes.

Step 2

Cooking the filling. Peel the potatoes and boil them in salted water until tender. Drain the water, heat the potatoes. You should get a slightly dry puree. Add sugar, salt, turmeric, sesame seeds, coconut flakes, garam masala to the puree, stir. Chop the cilantro greens and add to the puree as well.

Step 3

Roll out the dough into a rectangular layer about 2-3 mm thick. For convenience, you can divide the dough into two parts and roll out two layers. Put the filling on the dough, distribute it evenly. Grate the cheese and sprinkle the cheese over the potato filling.

Step 4

Gently roll up the roll, make sure that the filling does not come out during the formation of the roll. After the roll is fully formed, cut it with a sharp knife into equal pieces about 1-1.5 cm thick. Put each piece of roll on the table, sprinkled with flour.

Step 5

In the classic recipe, alu patras are fried in a pan greased with vegetable oil. You can deviate from the classics, put the rolls on a greased sheet and bake them in the oven at 220 degrees for about 15-20 minutes. Turn the rolls over while baking. Serve hot alu patras, sprinkle with herbs.
