It is necessary

    • 500 g fresh spinach;
    • 150 g flour;
    • 150 ml of plain yogurt;
    • 1 onion;
    • 1 egg;
    • 2 tbsp vegetable oil;
    • cilantro
    • tarragon
    • salt
    • ground pepper to taste.
    • For the sauce:
    • 150 g of plain yogurt;
    • zest of 1 lemon;
    • 1 tbsp lemon juice;
    • 2 tbsp chopped parsley.

Instructions

Step 1

Wash the spinach. You can use a frozen product to make pancakes. Thaw it at room temperature or in the microwave. Drain off excess water and cut off the spinach stalks and finely chop the leaves.

Step 2

Boil water, put spinach stalks in boiling water, bring to a boil and remove immediately. Cool the stems, dry them and chop finely.

Step 3

Chop the onions finely. Heat a skillet with vegetable oil (preferably olive oil). Place the onion in a skillet, add salt and pepper, stir and sauté over medium heat for three minutes.

Step 4

Reduce heat, add spinach leaves and stems, stir and cook for another three minutes. Remove the pan from the heat, chill the contents slightly.

Step 5

Pour eggs into spinach and onions, add flour. Finely chop the cilantro and tarragon, put them in yoghurt, salt, stir and pour into the dough. Stir it well, add more salt and pepper if necessary.

Step 6

Preheat the skillet well, pour some vegetable oil over it and wait for it to heat up. Spoon the portions of the dough into the skillet so that the pancakes do not stick together when frying.

Step 7

Fry the spinach pancakes on both sides until golden brown. Serve them hot with sour cream.

Step 8

Add yogurt sauce to the spinach pancakes, if desired. To do this, finely chop the parsley, grate the zest of one lemon on a fine grater, and mix it all with plain yogurt. Add lemon juice to the sauce, mix everything again and pour over the pancakes.
