Pink salmon cooked in foil with lemon, tomatoes and Provencal herbs turns out to be tender, juicy and aromatic. In addition, this fish is very useful - it is rich in nutrients, trace elements and vitamins.

Ingredients:

  • 1 carcass of pink salmon (from 0.5 to 1 kg);
  • 1 onion head;
  • 1 thin-skinned lemon;
  • 2 red tomatoes;
  • 150-200 g of Parmesan cheese;
  • a mixture of Provencal herbs;
  • 4 cloves of garlic;
  • coarse salt.

Preparation:

  1. Defrost the pink salmon carcass completely. Remove scales, cut off head, fins and tail. Cut the belly lengthwise and scrape out all the insides, rinse the processed fish. Next, cut the pink salmon along the ridge, you get two longitudinal halves. Gently pick up the ridge with bones with a knife and remove. The result is a fillet on the skin.
  2. Put the pink salmon halves on a flat plate, rub with coarse salt and sprinkle with Provencal herbs.
  3. Cut the lemon in half. Pour the juice of half a lemon over the pink salmon. Cut the second part into thin circles.
  4. Leave the fillet to marinate for half an hour.
  5. Remove the peel from the tomatoes: rinse with boiling water, then place in cold water for a few minutes, after this procedure the peel should come off without problems. Cut into semicircles.
  6. Chop the cloves of garlic in any way: using a fine-mesh grater, garlic press, or just finely chop with a knife.
  7. Peel the onion head and cut into half rings.
  8. Grate the cheese. When choosing a cheese, one should start from the fact that the dish will have an Italian flavor, so the hard variety "Parmesan" or similar ones - "Swiss", "Gouda", "Gorny", "Edam", "Holland" are perfect.
  9. Meanwhile, the fish is already soaked. Put each half of the fillet on a separate foil.
  10. Distribute all prepared foods evenly into 2 parts: sprinkle the pink salmon with garlic, put lemons, onions on top, then tomatoes. Tuck the edges of the foil so that the fish appears to be in a boat, that is, we do not wrap the fillet pieces completely, but leave the surface open.
  11. Now you need to carefully put the pink salmon on a baking sheet, put in the oven at 200 ° for 20 minutes
  12. After the time has elapsed, remove the baking sheet with fish, sprinkle each piece with cheese and send to bake for another 15 minutes.

Such a dish is served on the table directly in foil, you can also decorate the fish with herbs.
