Pumpkin bread is a baked product commonly confused with pumpkin muffins. The recipe for the latter is very often served under the guise of a pumpkin bread recipe, however, a muffin is a sweet pastry, unlike bread, which is prepared in a slightly different way, and above all, from unsweetened yeast dough.

It is necessary

    • 500 g pumpkin;
    • 60 ml of water;
    • 2 tsp honey;
    • 2 tsp salt;
    • 2 tsp dry yeast;
    • 500 g flour;
    • 2 tsp vegetable oil.

Instructions

Step 1

Peel the pumpkin, remove the seeds.

Step 2

Cut the prepared pumpkin into slices and place on a baking sheet or thick-walled baking dish. Place in the oven for 15-20 minutes.

Step 3

Remove the pumpkin from the oven and cut off any burnt pieces - only clean pulp should remain.

Step 4

Mash the pumpkin thoroughly. If necessary, rub the puree through a sieve or use a blender. You should have about 300-350 grams of pumpkin puree.

Step 5

Leave the finished puree to cool to room temperature.

Step 6

Make a dough. To do this, dilute honey in 60 ml of warm water. Sift flour and add salt and dry yeast to it. Stir and pour the water and honey into the mixture. Stir again.

Step 7

Add pumpkin puree cooled to room temperature, mix everything again, pour in a small amount of vegetable oil and start kneading the dough - this can take 10-15 minutes.

Step 8

You should have a very soft and elastic dough that sticks slightly to your hands. If the dough comes out too sticky and spreads, add a little flour. If the dough is too elastic, pour a couple of tablespoons of water into it.

Step 9

Transfer the finished dough to a spacious bowl and sprinkle with flour. Cover the top with a cling film or a towel to keep the dough from winding and let sit for an hour and a half to two hours. The dough should expand dramatically - twice or more.

Step 10

Transfer the dough to a floured table or board to form a round loaf. Sprinkle a baking sheet or baking dish with flour, transfer the bread to it, cover it again with a towel or film and leave for another hour and a half.

Step 11

Preheat the oven to 220-230˚С. Bake the bread for about 40 minutes. When it's done, remove it from the oven and let cool for about 30 minutes on a board or wire rack.
