The dough for soft and rich pies is most often prepared in a sponge way. A baking sheet is greased with vegetable oil or fat. Before placing in the oven, the pies should stand in a warm place for 20 to 30 minutes. There are many fillings for pies. The beauty of these small products is that they can be baked right away with different fillings. Just do not put pies with sweet and savory fillings on one baking sheet.

- Dough:
- milk (1/2 cup);
- fresh yeast (30 g);
- granulated sugar (2 tablespoons);
- salt (1 tsp);
- baking margarine or butter (50 g);
- wheat flour (900 g).
- Apple filling:
- fresh apples (500 g);
- granulated sugar (1/2 cup).
- Fresh cabbage filling:
- cabbage (1 kg);
- onion (1 piece);
- egg (3 pieces);
- milk (1 glass);
- salt to taste.
- Curd filling:
- cottage cheese (200 g);
- sour cream (2 tablespoons);
- egg (2 pieces);
- granulated sugar (1 tbsp. spoon);
- flour (1 tsp);
- salt to taste.
- Beef filling:
- boiled beef (500 g);
- boiled rice (1/2 cup);
- bow (1 head);
- salt to taste.
Instructions
Step 1
Dough.
Mash yeast with 1 tbsp. a spoonful of granulated sugar. Pour in warm milk and add 400 g of flour. Knead the dough and place in a warm place. The dough should double in volume.
Step 2
Add salt, leftover flour, and melted butter. Beat eggs separately with 1 tbsp. a spoonful of sand. Pour them into the dough. Knead the dough with your hands until it is smooth and easy to come off your hands.
Step 3
Cover the dough with a napkin and let rise. Crumple it well to remove any air bubbles, and leave it to stand still. The dough should come up 2-3 times.
Step 4
Pour the finished dough onto a floured table. Roll into a long and thick sausage, cut into pieces. Try to keep the slicing the same. Mash each piece into a tortilla. Put the filling in the middle and pinch.
Step 5
Arrange the pies on a baking sheet so that they do not touch each other, the dough will rise during proofing and baking. Brush the top of the patties with yolk. Bake the patties in a hot oven for 20 to 25 minutes.
Step 6
Apple filling.
Peel the apples, divide into quarters and remove the seeds. Cut the apples into chunks and place in a saucepan. Add sand and two tablespoons of water. Simmer until the apple mass is smooth.
Step 7
Fresh cabbage filling.
Chop the cabbage and place in a saucepan. Pour in milk and simmer until soft, until the milk has completely evaporated. Hard boil the eggs. Chop the onion and fry in oil. Mix all ingredients together and salt.
Step 8
Cottage cheese filling.
Combine cottage cheese, eggs and sugar in a bowl. Add sour cream. If the mass turns out to be thin, then add flour. If desired, add raisins or chopped dried fruits to the filling.
Step 9
Beef filling.
Pass the boiled beef through a meat grinder. Add rice and sautéed onions. Season with salt and pepper to taste.
