  • -3 large green apples
  • -50 g raisins
  • - juice of half a lemon
  • -2 cloves of garlic
  • -1 bunch of cilantro
  • -100 ml. semi-sweet white wine
  • -2 tbsp butter
  • -0.5 tsp ground paprika
  • -salt pepper.

Step 1

For the sauce, pour boiling water over the raisins, dry them, cover with white wine and leave for 15 minutes. Peel the apples and drizzle with lemon juice to prevent the flesh from darkening. Chop the cilantro finely.

Step 2

Crush the garlic, peel and chop. Fry the garlic in butter for 30 seconds. Put the apples, fry over high heat, stirring for 2 minutes. Add raisins, liquid and all other ingredients (except pork) and cook over medium heat for about 5-7 minutes. The apples should not completely lose their shape. Cool the sauce and refrigerate.

Step 3

For pork chops, trim off excess fat, leaving a little. Rub the chops with salt and pepper. Put the cut fat in the pan and put it on medium heat - while the pan heats up, some of the fat is melted. Remove the fat from the skillet and place the chops on top of it. After a couple of minutes, cover the chops with a piece of foil to keep the fat from splattering (but not too tightly). Fry the chops until golden brown on both sides, turning them over a couple of times. Do not dry! Serve the chops with the sauce.
