Step 1
Cajun-style fish casserole
The Kajuns are an ethnic group made up of descendants of French colonists living mainly in the south of the American state of Louisina. Their cuisine is renowned for its simple ingredients and quirky, aromatic spice mix that gives its dishes a pungent exotic flavor. Only fresh shrimp are suitable for the Cajun-style casserole.
Step 2
In a large saucepan, bring the wine to a boil, but do not simmer. Dip the shrimp and cook for 2-3 minutes. Remove the shrimp with a slotted spoon, dip in a bowl of cold water and ice and peel them.
Step 3
Finely chop the green onion feathers. In a small skillet, melt half the butter, sauté the chopped onion for 1 minute. Pour in the cream, add half of the spice mixture, add basil and paprika. Bring the sauce to a boil. Pour in the wine in which the shrimp and the seafood were cooked. Warm up everything for 1-2 minutes.

If you are unable to purchase a Cajun spice mix, make it yourself. To do this, put 2 teaspoons of black peppercorns in a mortar and crush it. Add one tablespoon each of garlic and onion powder, two teaspoons each of white pepper and dried thyme, one and a half teaspoon of cayenne pepper, and half a teaspoon of dried oregano. Mix and store in a dry, dark place in an airtight jar.

Casserole with crackers
Melt the butter in a saucepan over low heat, add chopped parsley, peeled and chopped chili and garlic into it. Fry for 3-5 minutes. Crush the crackers with mashed potatoes until small crumbs, add the infused oil and mix well.
