Khachapuri is a light snack that is a hearty flatbread with a cheese filling. The vegetarian version of this dish is prepared without eggs. Optionally, by changing the filling in this recipe, you can make khachapuri with potatoes or, for example, with Adyghe cheese and herbs.

- For the test:
- flour - 300 g
- yogurt - 200 ml
- salt - 1/2 tsp.
- sugar - 1/2 tsp.
- soda - 1/2 tsp.
- For filling:
- feta cheese - 150 g
- mozzarella cheese - 200 g
- ground black pepper - to taste
Instructions
Step 1
In a deep bowl, combine all the free-flowing dough ingredients: flour, salt, sugar and baking soda. Then add yogurt to the mixture, mix thoroughly.
Step 2
Knead the dough. The dough should be pliable, elastic and slightly sticky to your hands. Then place the dough in a plastic bag or wrap it in plastic wrap. Leave him to rest for 10 minutes.
Step 3
In the meantime, prepare the cheese filling. Mash the feta cheese and mozzarella with a fork. Then add black pepper and stir.
Step 4
After 10 minutes, roll the dough into a sausage. Cut it into 8 equal pieces. Roll out each part with a rolling pin. Try to give each cake a round shape.
Step 5
You will have 8 cakes. Place the cheese filling on the tortilla, cover with the same tortilla on top. Pinch the edges and roll out the khachapuri again with a rolling pin.
Step 6
Heat vegetable oil in a skillet. Fry the resulting khachapuri under the lid until golden brown. Each side will take approximately 3 minutes.
Step 7
After browning, place the khachapuri on a paper towel. This must be done in order for the excess oil to be absorbed. Serve the cheesecakes hot to the table.
