This dish, stuffed with mushrooms and mozzarella cheese, will simply have a stunning aroma with spicy herbs, and the best solution would be fresh thyme.
So, to prepare stuffed turkey breast with mushrooms and mozzarella cheese, you need the following set of ingredients:
- fresh thyme;
- turkey breast (520 g);
- freshly squeezed juice from half a lemon;
- freshly ground allspice and black pepper (at your discretion);
- medium-sized carrots (2 pieces);
- edible salt;
- vegetable broth (210 ml);
- mozzarella cheese (1 pack);
- royal champignons (210 g);
- cold-pressed olive oil (1 tbsp. spoon);
- small zucchini (4 pieces);
- shallots (2 onions).
With a very sharp and rather thin kitchen knife, cut a pocket in the turkey breast, then salt the meat and season with pepper. After processing, cut all zucchini and champignons into small enough cubes, then chop the peeled shallots. First, put the mozzarella cheese in a colander, then cut it very finely into cubes, mix it with chopped vegetables.
It is only necessary to put aside the chopped shallots (1 tablespoon) in a separate plate, season the cheese and vegetable mixture, put it in a pocket cut in the breast, secure with toothpicks or culinary skewers.
Heat the olive oil in the required amount in a skillet with a thick bottom, fry the stuffed turkey breast well on it. Add broth to the pan, simmer with the lid closed for twenty minutes. Chop the zucchini very finely, also chop the carrots and champignons. Add shallots and chopped vegetables to the breast, season again, cover again and simmer for fifteen minutes.
Place the cooked stuffed turkey breast on a plate and place in a warm place. Season the stewed vegetables additionally with freshly ground pepper, table salt, fresh thyme and freshly squeezed lemon juice.
