The most delicious and wholesome food is considered to be rural, because it is natural. Whether this is correct or not is unknown. But the Village salad, which includes mushrooms, pickles, boiled potatoes, chicken, can be called a real masterpiece of Russian cuisine, combining great taste and simplicity.
There are many options for such a salad. Each housewife can add something different to the main recipe: beans, green peas, use fresh cucumbers instead of pickled cucumbers.
If you replace the champignons with aspen mushrooms or porcini mushrooms, fried in sour cream, then the salad will turn out to be more nutritious, and the taste is richer and more memorable.
And to prepare a traditional dish you will need:
4 potatoes;
200 g (ready-made) mushrooms;
300 g (ready-made) chicken breast;
one onion;
3 pickled or pickled cucumbers;
2 cloves of garlic;
salt;
1 tablespoon honey
2 tablespoons of balsamic vinegar
To make the sauce you will need:
3 tablespoons of sour cream;
1 tablespoon mayonnaise;
3 tablespoons of vegetable oil;
2 tablespoons of mustard
a mixture of spices.
Preparation:
All ingredients must be prepared in advance. Potatoes, 4 large tubers, must be boiled in their uniforms, peeled and cut into fairly large cubes. Chicken breast should be cooked with bay leaves, peppercorns, salt, raw onions and carrots. Boiled chicken can be replaced with cooked, smoked. The breast should also be cut into cubes.
The champignons need to be washed, cut and either boiled or fried. If you intend to use pickled champignons, then they need to be cut: small - in half, large - into 4 parts.
The onion is cut into half rings. It can be used raw or pre-pickled. This will give the salad a more savory flavor. A good marinade comes from a mixture of honey and balsamic vinegar, you can use apple cider vinegar, and the usual one will do. The onions should be in the marinade for 1-1.5 hours.
Pickled or pickled cucumbers are cut into the same cubes as potatoes and chicken breast. The cloves of garlic must be crushed with a knife with a wide blade (if the garlic is not young, it is advisable to pull the core out of it), add salt and finely chop. Put all the products in a salad bowl, season with salt and sauce.
For a festive table, a more satisfying and more complex salad is suitable, which is laid out in layers. The sauce for this salad is used the same as in the previous recipe.

Preparation:
Potatoes are boiled in their uniforms, peeled and rubbed on a grater. Honey mushrooms can be fried or pickled, the legs should be separated from the cap. Boil the beef with spices, salt, onions, carrots and cut into small cubes. Chop and fry the bacon, you can use smoked.
Finely chop the onion and use it raw, or pickle as in the previous recipe. Squeeze sauerkraut and chop. Finely chop the eggs with a knife or mash with a fork. Finely chop the garlic. Prepare the sauce. Lay out the salad in layers in the following order: beef; onion; mushrooms; sauce; potato; sauerkraut; sauce; bacon and garlic; sauce; eggs.
There are many salads with the name "Village". Sometimes they are radically different from each other. For example, there is a salad that consists of fresh cucumbers, tomatoes, pickled chicken breast, cabbage leaves and seeds.
Let the salad sit for at least 1-2 hours. After that, the dish can be served. Such a hearty and tasty salad will be a good alternative to traditional Olivier on the festive table.
