Udon is a traditional Japanese noodle made with wheat flour. Udon can be a stand-alone dish served with sauces, or a side dish with vegetables, shrimp and meat. Udon is easily absorbed by the body and quickly satisfies hunger.

It is necessary

  • Ingredients for 4 persons:
  • - chicken broth - 200 ml;
  • - chicken breast - 2 fillets;
  • - udon noodles - 300 g;
  • - dried shiitake mushrooms - 10-15 pieces;
  • - garlic - 2-4 cloves;
  • - ginger root - 3 centimeters;
  • - a tablespoon of any chili paste;
  • - light soy sauce - 3 spoons;
  • - green onions - a small bunch;
  • - 3 tablespoons of vegetable oil;
  • - cilantro for decoration.

Instructions

Step 1

Heat the chicken broth, put the dried shiitake mushrooms in it, leave for 1 hour to soak. Then we filter the infusion, but do not pour it out. Cut the shiitake into equal small slices.

Step 2

We cut the chicken breasts lengthwise so that there are 4 portions, grease on all sides with chili paste, wrap each part in cling film, pre-oiled from the inside with vegetable oil, leave for 1 hour at room temperature.

Step 3

Boil the udon noodles according to the instructions on the package, but do not cook it a little. We wash the noodles with cold water, put them in a colander so that the excess liquid is glass.

Step 4

Preheat the oven to 160 degrees. Put the chicken fillet in cling film on a cold baking sheet, put it in the oven for 15-20 minutes (depending on the initial size of the chicken breasts).

Step 5

Peel and grind the garlic and ginger as finely as possible. Finely chop the green onion.

Step 6

In a wok, heat the oil over maximum heat, fry the garlic, ginger and green onion for 30 seconds, stirring constantly. Add mushrooms, pour in the mushroom infusion and soy sauce. Without reducing the heat, cook for 2 minutes. Put the noodles in the pan, stir, heat for 2 minutes, remove from heat.

Step 7

Cut the chicken fillet beautifully obliquely to make slices 1-1.5 cm thick. Put the noodles on plates, put the chicken on top, sprinkle with chopped cilantro, immediately serve.
