Muffins are delicious baked goods made with raisins, nuts, or other ingredients. Cooking them is very simple, even an inexperienced housewife can handle it. Bake an almond cake with prunes - your loved ones will surely like its taste and aroma.

- 100 g wheat flour;
- 50 g chestnut flour;
- 100 g almond flour;
- 100 g heavy cream;
- 4 eggs;
- 100 g sugar;
- 0.5 tsp baking powder for dough;
- 150 g pitted prunes;
- 4 tablespoons cognac.

Step 1
This recipe requires almond flour, but if you don't have it, you can grind the kernels in a coffee grinder. Almonds need to be peeled beforehand. Pour boiling water over it for one minute, then drain and soak the nuts in cold water. This is usually enough for them to cleanse easily. Otherwise, repeat.
Step 2
Peel the almonds off and wipe off excess moisture with a tissue. Then cover a baking sheet with baking paper and finally dry the nuts in the oven at a temperature of no more than 100 degrees. Make sure that they do not darken, otherwise the taste will change.
Step 3
Now you can cool the almonds and grind them in a coffee grinder. There are subtleties here too. In order not to get a sticky mass, put a little almonds in the bowl of the coffee grinder, and also add powdered sugar (for 40 g of almonds, 1 tablespoon of powder is required). Do not store the resulting mixture, but immediately start cooking.
Step 4
Wash the prunes and dry with a tissue. Cut into 2 or 4 pieces and cover with cognac for impregnation. This will take 30 minutes. In the meantime, get busy making the dough.
Step 5
Separate the whites from the yolks. Whisk 4 egg whites until stiff, adding sugar. Mash 2 yolks and combine with whipped whites. In doing so, pour the whites into the yolks, and not vice versa.
Step 6
Now add the cream, stir and slowly add the sifted wheat flour and chestnut flour mixture, add the almond flour and baking powder. At the same time, try to stir gently so that the dough does not settle.
Step 7
Cut the cognac-soaked prunes into smaller pieces and mix with the dough. Grease a baking dish and sprinkle with flour or cover with parchment paper. Spread the dough out and bake in a hot oven. Do not open the door at first, the baked goods may settle.
Step 8
Determine readiness by piercing the cake with a match or a splinter. If it turns out to be dry, remove the cake from the mold, cool and sprinkle with powdered sugar. Or drizzle with melted chocolate.
