This delicious salad can be taken with you on a picnic and goes well with grilled pork or chicken. It is prepared from canned pineapples and oranges, garnished with coconut flakes.
It is necessary
- For eight servings:
- - 4 boneless chicken breasts;
- - 380 g of coconut milk;
- - 310 g of canned oranges;
- - 300 g of canned pineapple;
- - 1, 5 glasses of light mayonnaise;
- - half a glass of sour cream;
- - half a glass of fried coconut;
- - half a glass of roasted peanuts;
- - 2 stalks of celery;
- - 2 tbsp. spoons of lime juice, pickling spices;
- - black pepper, salt, lettuce leaves.
Instructions
Step 1
Season the chicken breasts with salt and pepper, put on a preheated skillet, cover with coconut milk. If necessary, add water, the liquid should completely cover the chicken. Bring to a boil over high heat, reduce heat, cook for 15 minutes uncovered.
Step 2
Transfer chicken breasts to a plate, chill completely. Break it into small pieces with your hands.
Step 3
Mix sour cream with mayonnaise, add lime juice, spices. Finely chop the celery, send to the mass, mix and put with the chicken.
Step 4
Add chopped canned oranges and pineapples and roasted peanuts to the salad. Pepper, salt to taste, stir. Refrigerate.
Step 5
Place the lettuce and chilled fruit chicken salad on top of the lettuce in a serving bowl. Sprinkle with coconut on top, serve.
