Crack the eggs gently, separate the whites from the yolks. Yolks are not needed, they can be used for other dishes. Beat egg whites with sugar with a whisk or mixer on low speed until fluffy.

Place the mascarpone in a bowl. Place the protein mixture in the cheese and stir gently.

Add strawberry puree, some vanillin and stir again. That's it, the strawberry mascarpone cream is ready. If it turns out to be too thick, it can be thinned with a little 33% cream. The cream can be used to make cakes or pastries.

To prepare a delicious and original dessert, put the ready-made cream in the freezer for an hour and a half. Then place a layer of chopped fresh strawberries in the bowls, then a layer of frozen mascarpone cream, then again a layer of strawberries and a layer of cream. Garnish with strawberries or mint leaves before serving.
Step 6
An analogue of mascarpone cheese for this cream can also be prepared at home. Heat one liter of cream with at least 20% fat over low heat to 80 ° C, add three tablespoons of lemon juice or diluted citric acid. Mix everything and simmer for ten minutes, stirring occasionally.
Step 7
Take a piece of clean cheesecloth, roll it into five to six layers, put it in a colander and discard the heated cream. Leave them to strain overnight. The product can be used the next day.
