Do you think that if you remove minced meat, parmesan and cream sauce from the list of ingredients, then nothing edible will come of it? You haven't tried Veggie Veggie Lasagne yet!
It is necessary
- - sweet peppers, 3 pcs.,
- - onions (regular onions, white or red), 2 medium heads,
- - carrots, 1 large,
- - tomatoes, 5-6 large,
- - potatoes, 1 medium,
- - eggplant, 1 medium,
- - garlic, 2-3 cloves,
- - salt, sugar, black pepper to taste,
- - olive oil or any vegetable oil, 30-40 ml,
- - peanuts for sprinkling (optional), 50 g,
- - pasta "lasagna", 300 g,
- - water, 150-200 ml.
Instructions
Step 1
Cooking the sauce. Pour about 20 ml of oil into a saucepan, put it on the stove, heat it up, then fry the garlic on it.
As the garlic is browned, add to it the onion cut into thin half rings, grated carrots, thinly sliced peppers and grated tomatoes (preferably without skins).
Tomatoes can be twisted or chopped whole in a blender. Add water, salt, sugar, pepper and simmer for 10 minutes.
Step 2
In the remaining oil, fry the eggplants cut into circles on both sides.
Step 3
Put a layer of sauce in a lasagna dish, then a layer of pasta (raw), then another layer of sauce and a layer of thin potato slices (salt and pepper them), a layer of lasagna sheets, a layer of sauce, fried eggplant, a layer of sheets, again a layer of sauce and etc. Pour the sauce very generously into the very last layer of lasagna sheets. Cover the mold with foil and put it in a preheated oven (200oС) for 30-40 minutes.
Step 4
We take out the lasagna, let it cool, then cut it, sprinkle with chopped peanuts, decorate with herbs. You can serve lasagna with lean mayonnaise sauce.
