Step 1

Make potato dough. Peel and grate raw potatoes or chop in a blender. If the potatoes are very starchy, place the mixture in cheesecloth and squeeze out the excess liquid. Mix potatoes with flour in a bowl, add soda, slaked with vinegar, or another baking powder there. Break the egg into the same container. Season with salt, stir with a wooden spatula, and then knead the dough with dry hands. If desired, mashed potatoes can also be made as a base for potato dough. To do this, first boil the potatoes, and only then add flour, eggs and other ingredients to it.

Take care of the stuffing. Beans can be any - white or red, the main thing is not to choose green beans. If you bought dry beans, soak them in warm water before cooking. When it swells a little, transfer to salted boiling water and cook until soft. Canned beans can also be used. Choose canned food in its own juice, without tomatoes, corn or other additives. Transfer the cooked beans to a bowl and mash until puree.

Peel the onion and chop finely. Fry it in hot vegetable oil for 3-4 minutes. Then add the chopped garlic to the pan, cook for another 2-3 minutes. Put this mixture to the beans, salt and pepper, add dried Provencal herbs, mix everything. Try the filling. It should be hot enough to complement the bland taste of the potatoes.

Step 4

Form the potato dough into thick pancakes. Place the filling in the center of each, and then roll them up to make a patty. Pinch the edges. Grease a baking sheet with oil, put the pies on it. Preheat oven to 180 degrees. Place the baking sheet in there for at least 20 minutes. The finished pies should be golden brown. Serve hot, accompanied by a bowl of fresh sour cream.
