Pies stuffed with herbs and cheese are a delicious dish that cooks quickly. It will definitely become one of the traditional family treats.
Ingredients for the dough:
- Hot mineral water - 300 g;
- Fine salt - 5 g;
- Flour - 750 g.
Ingredients for the filling:
- 1 bunch of dill, cilantro and green onions;
- 2 bunches of spinach, sorrel and lettuce;
- Onions - 40 g;
- Suluguni cheese - 120 g;
- Corn (olive) oil - 60 g;
- Fine salt and pepper taste.
Preparation:
- Transfer the food to be kneaded into a large and wide enamel bowl. It should be cool but elastic.
- Transfer the resulting dough to a wooden board and cover with a rag. Leave it to come up for 40 minutes.
- During this time, you need to rinse all the greens, dry them and chop them. Transfer to prepared auxiliary bowl.
- Cut "Suluguni" into thin strips and transfer to a bowl with herbs.
- Peel the onion from the top husk and chop finely. Transfer to a prepared saucepan with heated oil (vegetable or olive). The onion should turn golden.
- Add chopped herbs and Suluguni cheese to the onion in a saucepan. Season with pepper and salt. Stir constantly the contents of the saucepan, fry the mixture of cheese, onions and herbs for 3 minutes.
- As soon as the mass of the filling visually decreases, but does not change its color, it should be removed from the heat. Transfer to a bowl and leave on the kitchen counter until cool.
- Roll out the dough thinly and cut into equal squares.
- Distribute the filling evenly over the squares. Fold the squares in half diagonally. Once again fold the resulting triangles in half, fasten the edges.
- Put the resulting pies in a saucepan, where the filling was prepared. Pour mineral sparkling water into it and fry for 5 minutes on each side.
- The pies prepared according to the given recipe can also be steamed by boiling them in a double boiler for 35 minutes.
