Step 1
Wash the grapefruit. Pierce them in several places with a fork or knife. Place the fruits directly in the skins in a saucepan of cold water, bring to a boil and simmer for 5 minutes. Drain and remove the grapefruit.
Step 2
In a saucepan, make the syrup. To do this, mix sugar and water in a 3:10 ratio and heat to a boil. Put already boiled grapefruits there. Bring the mixture to a boil and cook the fruit in the syrup for 40-50 minutes over medium heat. Then add more sugar, 1/3 of the previously taken amount. Cook until completely dissolved. Repeat the operation with the addition of sugar 2 more times. As a result, your fruit should soften and the syrup should become thick.
Step 3
Catch the grapefruit out of the syrup. Cut them into 4 pieces without peeling them off and put them in a blender. Grind until puree. Combine the grapefruit puree with the thickening starch and heat the mixture on the stove. Instead of starch, you can take 2 times more flour. Separate the whites from the yolks. Beat the whites separately, gradually adding sugar dissolved in water with it. Take it at the rate of 1/2 cup for 3 proteins. Mix protein mass with grapefruit.
Step 4
Grease baking tins with oil. Fill them with the resulting mass. Place in an oven preheated to 180 ° C for 10 minutes. When baking, watch out for the soufflé - if the top starts to burn, reduce the heat and move the baking sheet with the tins to the lower level of the oven. Cool the finished soufflé a little and serve directly in the tins.
