The soup is called the head of the dinner. This liquid dish, popular in many countries, is usually the first to be served. Even busy housewives can please a family with a delicious soup; there are many simple recipes for this dish.
Spring soup
To make a simple vitamin soup you will need:
- 500 g of sorrel;
- a few feathers of young garlic;
- 2-3 tbsp. l. vegetable oil;
- 1-2 tbsp. l. wheat flour;
- 3-4 potatoes;
- parsley greens;
- salt.
Wash sorrel and young garlic feathers well under running water. Then chop finely, mix and simmer in hot vegetable oil. Add flour, mix thoroughly again so that there are no lumps, and cover with boiling salted water (the soup should be moderately thick).
Then add the peeled and diced potatoes and cook until tender. Sprinkle the spring soup with chopped parsley before serving.
Cheese soup with mushrooms
For an easy-to-prepare and original cheese soup, you need to take the following products:
- 200 g of fresh mushrooms;
- 200 g of processed cheese;
- 3-4 potatoes;
- 1 carrot;
- 1 head of onion;
- vegetable oil;
- ground black pepper;
- salt.
Wash the mushrooms thoroughly or wipe with a damp cloth, then peel and cut into slices. Peel onions and carrots, wash and chop finely. Then fry the prepared ingredients in oil until cooked. Season with salt and pepper to taste.
Pour 2 liters of water into a saucepan and bring to a boil. Then add the pre-peeled and diced potatoes, season with salt and cook for 10-15 minutes.
Grate the melted cheese and add to the pot to the potatoes. Continue cooking until the cheese is completely melted. Then add the fried vegetables with mushrooms, salt and pepper if necessary. Bring cheese soup to a boil and remove from heat.
Vegetable okroshka
To make this simple and popular cold soup, you need:
- 1 ½ glass of bread kvass;
- 1 boiled potato;
- 1 small boiled carrot;
- ½ bunch of green onions;
- 1 cucumber;
- 3 tsp sour cream;
- 1 egg;
- ½ tsp granulated sugar;
- ½ tsp mustard;
- sprigs of parsley and dill;
- salt.
Peel the boiled potatoes and carrots and cut them into small cubes with the fresh cucumber. Hard boil the chicken egg, cool, peel and separate the yolk from the protein. Rinse green onions thoroughly under running water, chop finely and rub with salt, egg yolk, sour cream, mustard, salt and granulated sugar.
Combine all prepared ingredients: finely chopped vegetables with grated green onions. Then mix everything well and cover with chilled bread kvass. Serve vegetable okroshka with sour cream, sprinkle with chopped dill and parsley.
In the same way, you can cook the Ural okroshka. To do this, replace the fresh cucumber with finely chopped sauerkraut.
