Instructions
Step 1
Start by pouring the goat's milk into a saucepan. Usually 4 liters of milk and a 7 liter saucepan are taken.
Step 2
Heat the milk to 80 degrees by checking the temperature with a thermometer. Make sure that no foam forms during the process.
Step 3
Remove goat milk from heat and add lactic acid bacteria to it. 4 liters usually takes a quarter of a teaspoon.
Step 4
Dissolve 1 tablet of rennet in five tablespoons of water, then add the resulting mixture to the already prepared mass of milk and bacteria.
Step 5
Mix thoroughly, cover the pan with a lid and let it brew for 12-16 hours at room temperature.
Step 6
After waiting, line the colander with gauze and drain the serum. This is done like this: the ends of the gauze are connected and tied tightly, the gauze itself is suspended over the cup. Expression takes 6-8 hours.
Step 7
Remove the resulting cream cheese from the cheesecloth and transfer it to an airtight container.
