This red onion pie recipe is common in Provence. There, one more local dish is surely added to it - tapenade, which is a paste of olives and capers. These ingredients make the baked goods unusually tasty and original.
It is necessary
- For filling:
- - 5-6 red onions;
- - 1 glass of dry red wine;
- - 1 tbsp. a spoonful of butter;
- - a pinch of salt and sugar;
- - 2 tbsp. spoons of water;
- - 3 tbsp. tablespoons of olive oil;
- - 100 g olives;
- - 200 g of anchovies;
- - 3 cloves of garlic;
- - parsley greens;
- - 2 tomatoes;
- - 1 egg.
- For the test:
- - 10 g of live yeast;
- - 200 g flour;
- - an egg;
- - 3 tbsp. spoons of water;
- - a pinch of salt;
- - 1 tbsp. a spoonful of sugar.
Instructions
Step 1
Mix flour with sugar and salt. Add the egg and yeast diluted in warm water. Knead a soft dough, wrap it in cellophane and refrigerate for 30 minutes.
Step 2
Heat the wine a little and dilute the sugar and salt in it. Add red onion, peeled and cut into half rings. Leave it on for an hour.
Step 3
Make a tapenade. To do this, grind olives, peeled tomatoes, anchovies and peeled garlic in a mortar. Mix with olive oil and parsley.
Step 4
Roll out the dough into a baking dish. Place tapenade in the center and sprinkle with caramelized red onions. Grease the sides with an egg. Bake at 180 ° C for about 25 minutes.
