Potato pancakes are incredibly tasty, hot in the heat, with apple mousse or fresh sour cream - a great breakfast solution! The taste of potatoes with an onion note goes well with vanilla nuance and sour apple mousse.

- - 500 g of apples;
- - 1 onion;
- - 2 eggs;
- - 60 g of flour, sugar, water;
- - 5 g of salt, vanilla sugar;
- - 40 ml of vegetable oil;
- - half a lemon.

Step 1
Let's make apple mousse for potato pancakes. In a saucepan, combine the juice and zest of half a lemon, water, vanilla sugar, and regular sugar. Bring the mixture to a boil. Peel the apples, remove the cores, cut into slices and send to the saucepan. Cook together for 15 minutes. Then grind the mass until puree. Set aside. This is a fragrant apple mousse with sourness.
Step 2
Rinse the potatoes, peel, rub everything on a coarse grater. Place in a deep bowl, add onion, peeled and finely chopped, salt, sifted flour. Drive in two eggs there. You can add spices to your liking. Knead the pancake mix thoroughly.

Heat the pan well, pour in a small amount of vegetable oil. Spoon the potato dough with a tablespoon. Fry on both sides, then place a serving of potato pancakes on a platter and place the next batch of dough in the pan. Thus, fry the pancakes out of the whole dough.
