As soon as the first greens appear in the beds, many housewives add them to the first and second courses, to fish, to meat, to stuffing, to salads. You can also make pancakes with herbs with a spicy walnut sauce from it.
It is necessary
- For pancakes:
- - greens (beet tops, sorrel, green onion and garlic feathers, lettuce leaves) 250-300 g;
- - carrots 1 pc.;
- - eggs 2 pcs.;
- - kefir 1 tbsp.;
- - semolina, flour 2 tablespoons each;
- - baking powder 1 tsp;
- - soda 0.5 tsp;
- - pepper, salt.
- For the sauce:
- - walnut kernels 0.5 tbsp.;
- - basil, parsley 1/2 bunch;
- - hard cheese 70 g;
- - 3 tooth garlic;
- - sour cream 1/4 tbsp.;
- - pepper, salt.
Instructions
Step 1
Remove tough stems from greens and chop finely. Peel the carrots, grate on a medium grater. Beat eggs with a whisk and salt.
Step 2
Combine chopped greens, egg carrots. Add kefir, flour, semolina, season with pepper and mix thoroughly. Let the mixture stand for 10-15 minutes to swell the semolina. Add baking powder and slaked soda to the green mass. Put the dough with a tablespoon in a pan with heated vegetable oil and fry on both sides until golden brown.
Step 3
For the sauce, lightly fry the nuts in a dry frying pan. Grate the cheese on a fine grater. Grind the herbs and salt thoroughly in a mortar. Add finely chopped garlic and grind until smooth. Then add the nut and grind again. Transfer the mass to a container, pour in sour cream and half of the grated cheese, mix. Then add the remaining cheese and stir again.
Step 4
When serving, garnish the pancakes with sprigs of fresh herbs, use with sauce.
