For flourless bread you will need:

- 70 g of oat bran;

- 50 g rye bran;

- 35 g of wheat gluten;

- 100 ml skim milk;

- 2 eggs;

- 10 g of flaxseed;

- 5 g dry yeast;

- 3 g of salt.

Making bread without flour

Stir dry yeast in warm milk heated to 50 degrees. Add half the gluten provided in the bread recipe and salt. Place the container in a warm place to lift the dough. This usually takes about 20-30 minutes. You can understand that the dough is ready by the foam bubbles that appear on the surface.

Combine dry ingredients: oat and rye bran, leftover gluten, flaxseed (set aside for sprinkling). Combine both masses and mix thoroughly. Make sure that the dough does not have lumps - they can have an unimportant effect on the finished bread.

Leave the dough to rise for 1-1.5 hours. It is advisable that it is suitable in a warm place - for example, near a radiator or other heating device. In order for the bread cooked without flour to turn out fluffy, the dough must be mixed several times in the process, allowing it to rise again and again.

When the dough is ready, spoon it into a silicone mold. Ideally, a shape divided into six small bricks. In this recipe, all the ingredients are given for this particular form. Do not fill it in completely. Leave at least a third of the height unoccupied, otherwise the bread may "run away". Sprinkle the surface of the dough with flax grains, let the bread rise again and carefully transfer the form to the oven.

Bake bread without flour for about 20-30 minutes at 160-200 degrees. The exact baking time will depend on the form in which you make your bread and on the characteristics of your oven.
