  • - coarsely ground corn flour - 3 tablespoons;
  • - eggs - 4 pcs.;
  • - powdered sugar - 100 g;
  • - honey - 1 tablespoon;
  • - ground cinnamon - 1 teaspoon;
  • - wheat flour - 170 g;
  • - baking powder for dough - 2 teaspoons;
  • - raisins - 3 tablespoons;
  • - zest of one lemon.
  • For glaze:
  • - lemon juice - 2 tablespoons;
  • - powdered sugar - 100 g;
  • - liquid honey - 1 tablespoon;
  • - hazelnuts - 3 tablespoons.

Instructions

Step 1

After washing the raisins thoroughly, put them in a deep bowl and cover with water. Leave in this state for a quarter of an hour. If you want to give your apple honey cake a more sophisticated taste, then replace the water with rum or cognac.

Step 2

Rinse the lemon zest thoroughly, then gently grate it on a fine grater, being careful not to touch the bottom white layer. Squeeze the remaining lemon pulp using a citrus juicer or simply by hand.

Step 3

Remove the skin from the surface of the apples. Pass the remaining pulp through the largest grater. Mix the resulting mass with corn flour and grated lemon zest.

Step 4

Take chicken eggs, break them and separate the whites from the yolks. Mix the second with ingredients such as honey and powdered sugar. Beat the mixture until it turns into a fluffy mass.

Step 5

Sift wheat flour with ingredients such as baking powder and cinnamon powder. Introduce a fluffy mass of yolks. Then add the raisins there, after draining the water from it, and the apple mixture. Mix everything until smooth.

Step 6

After beating the egg whites with a little salt, gradually add them to the bulk. Mix well. The apple and honey cake dough is ready.

Step 7

After greasing a muffin pan with butter, place the dough into it. Smooth it over all surfaces so that it lies in an even layer. Bake the dish at an oven temperature of 180 degrees for 40-45 minutes.

Step 8

Mix icing sugar and lemon juice with honey. Rub the mixture thoroughly until the powdered sugar is completely dissolved. The icing for the apple honey cake is ready.

Step 9

Decorate the cooled baked goods with icing. Sprinkle lightly fried in a pan without oil and finely chopped hazelnuts on top of it. The apple and honey cake is ready!
