In the days of our parents' youth, everyone went crazy with the salads "Mimosa", "Herring under a fur coat" and "Olivier". Nowadays, not a single trip to a restaurant or cafe is complete without Caesar salad. The modern alternative is very simple to prepare. The main problem is making a delicious Caesar sauce, which is often replaced with regular mayonnaise or a commercial sauce. All these sauce substitutes are unnatural filth. It's time to learn how to make your own signature dressing! And salad.
It is necessary
- - assorted salad leaves - 180 g;
- - cherry tomatoes - 7-8 pcs.;
- - loaf - 0, 5 pcs.;
- - garlic - 2 pcs.;
- - chicken breast or thigh fillet - 400 g;
- - olive oil - 150 ml.;
- - eggs - 6 pcs.;
- - mustard - 4 tbsp. l.;
- - egg yolks - 4 pcs.;
- - apple cider vinegar - 1 tbsp. l.;
- - anchovies - 20 g;
- - salt and pepper to taste.
Instructions
Step 1
Wash the chicken breast and pat dry with paper towels. Cut it into small square pieces. Pour olive oil (or sunflower) into a frying pan and fry the fillets until golden brown.
Step 2
Cut the loaf into regular portions. Then cut them into fairly large squares (one and a half centimeters). Fry them in a dry skillet until crusty. You can use an oven instead of a frying pan.
Step 3
Boil the eggs and cool them down. After they have cooled, cut into large pieces. Cut the cherry tomatoes in half.
Step 4
Chop the garlic finely and sauté in olive oil. Later, this garlic mixture will need to be poured over the croutons.
Step 5
Start making the sauce. Take four eggs and separate the yolks from the whites. Place the yolks, vinegar, mustard, salt and pepper in one container. Beat with either a blender or a mixer.
Step 6
While whisking, take the olive oil and start pouring it into the mixture. Add the chopped anchovies and beat again with a blender.
Step 7
Put the mixture of lettuce leaves, tomatoes, eggs, chicken and crackers in a salad bowl. Mix gently with two scoops or spoons. Pour the sauce over.
