Everyone's favorite Caesar salad takes pride of place both in the menu of many cafes and restaurants, and on the home table during festive celebrations. Preparing a salad is quite simple and will suit both a romantic dinner and a New Year's table.
It is necessary
- - 200 g chicken fillet;
- - 100 g cherry tomatoes (you can use ordinary tomatoes);
- - fresh Romaine lettuce (can be replaced with Iceberg);
- - 50-60 g of parmesan;
- - several pieces of loaf;
- - 1 clove of garlic;
- - some olive oil, pepper and salt.
- For refueling:
- - 2 boiled egg yolks;
- - 1/3 cup olive oil;
- - 1 tsp mustard;
- - 50-70 ml of lemon juice;
- - 1 clove of garlic;
- - salt.
Instructions
Step 1
First, you should start making bread crumbs from a loaf. To do this, crush a clove of garlic, add a couple of tablespoons of oil and heat in the microwave for about 20-30 seconds.
Step 2
Cut the loaf into cubes, after cutting off the crust. Roll the pieces of loaf in microwave oil and put on a baking sheet on parchment paper.
Step 3
Cook the croutons in an oven preheated to 150-160 degrees for about 35 minutes. The finished croutons should acquire a characteristic golden hue. Then they need to be cooled.
Step 4
While the croutons are cooking in the oven, you can make a salad dressing. It is necessary to grind the cooled boiled yolks, add chopped garlic, mustard and lemon juice. Salt everything, stir well and gradually add olive oil, stirring occasionally. Leave the dressing to stand for 10-15 minutes.
Step 5
Cut the chicken fillet lengthwise into large pieces. Add salt and pepper and fry in olive oil, cool.
Step 6
Rinse lettuce and tomatoes under cold water and dry on a paper towel.
Step 7
In a shallow salad bowl, tear the salad leaves into small pieces with your hands. Put the fried chicken meat and cooled croutons on top. Then rub the Parmesan on top.
Step 8
Mix the dressing well with a spoon or whisk and pour over the salad. Top with cherry tomato quarters or tomato slices. Serve the salad immediately after cooking.
